0 Recipe #230: Niña Colada Smoothie

Longing for warmer weather? Thinking of permanently vacationing on a tropical island? ;) Here's the perfect drink to melt away the winter time blues.... The only ice you'll be thinking about is the one in your tropical smoothie. :) You won't be thinking much about winter when you've got an refreshing umbrella drink in your hand!


Niña Colada Smoothie

Drink Ingredients:
1/2 c. silken tofu
1/2 heaping c. ice
2 c. pineapple juice (not from concentrate!)
1 c. unsweetened lite coconut milk from a can
1 Tbsp. honey
1 Tbsp. lime juice

Directions: Toss drink ingredients into a blender & pulse until well-blended & smooth. Garnish with a slice of pineapple or lime, a cherry, &/or a cocktail umbrella. :) Serve & enjoy!

Alternate Preparation Ideas: Use this recipe as a basic template for other ideas. For example, you could make a bowl of punch with it -- just add a scoop of low-fat vanilla ice cream and some club soda. Or, you could make popsicles with it by just simply pouring the mixture, as is, into popsicle trays and freezing.

Yield: 4 c., or 4 servings of 1 c. per person.
